Rhubarb, Pomegranate, Feta and Walnut Salad
The amount of ingredients depends on how many people you have and how much salad you will be serving them. The important thing for us is that this is a good combination of flavours.
Finely chopped rhubarb stalks
Spinach and beetroot leaves washed
Feta cheese, crumbled
Red pomegranate seeds. They’re also in season now
2 Tbsp. extra-virgin olive oil8
1 Tbsp. balsamic vinegar
1 Tsp. honey OR agave nectar
Salt/pepper to taste
Sprinkle some pomegranate, walnuts and crumbled Feta cheese on top of chopped rhubarb, baby spinach and beetroot leaves.
In a small bowl, whisk together the olive oil, balsamic vinegar, honey or agave nectar, and salt/pepper Drizzle over salad and enjoy!
