AVOCADO & BACON SALAD

Ingredients

  • 4 slices ciabatta or sourdough bread, cut into chunks
  • olive oil
  • 6 thin rashers streaky bacon
  • 1 tbsp red wine vinegar
  • 2 tsp wholegrain mustard
  • 1 tbsp honey
  • 2 large handfuls baby spinach
  • 1 avocado, peeled and sliced

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Toss the ciabatta chunks with 1 tbsp olive oil, seasoning and bacon rashers and then bake until crisp and golden.
  2. Meanwhile, whisk together the red wine vinegar, mustard & honey with 2 tbsp olive oil and season. Divide the spinach, avocado, bacon and croutons between 2 plates. Drizzle the dressing over and serve.
