Mandarins should be like small oranges which are flattened at the top and bottom. The skin is a deep orange colour, soft, glossy, often smooth and it peels away easily from the flesh. Inside, mandarins are divided into distinct, crescent-shaped segments which break away from each other. Each segment is enclosed in a fine membrane which holds the soft, juicy, flesh together. Generally, they’re deliciously sweet.

Unlike other citrus fruit, which can be harvested all year round, mandarins are only harvested in late autumn and winter but are best value from May to August. Choose mandarins that are glossy and heavy for their size – this indicates a high juice content.
